Raw Vegan Brownies

This recipe has to be one of my absolute favorites. I love to make these when I am craving something sweet and these always hit the spot. These brownies are undetectably vegan plus they are free of all processed oils and sugars. These could even pass for breakfast. You only need 6 ingredients to make these delicious fudge brownies so let's get right to it.


All you need:

  • Measuring cups and spoons

  • Square dish

  • Wax paper (optional)

  • Time: 10 minutes to make them

  • Set time:45minutes-1 hour

  • Makes: 8 portions



Ingredients:

  • 1 cup of raw steel cut oats (or you can just use normal oats eg. Jungle oats)

  • 2 tablespoons raw cacao powder or cocoa powder

  • 2 tablespoon nut butter( I used macadamia nut you could use peanut/almond or tahini for a nut-free version)

  • 5 tablespoons of water or plant-based milk

  • 2 tablespoons of sweetener

  • 1 teaspoon vanilla extract

Icing:

  • 2 heaped tablespoons peanut butter( I used crunchy)

  • 2 tablespoons of raw cacao powder or cocoa powder

  • 1 teapot vanilla extract

  • 2 tablespoons of sweetener

  • 3 tablespoons of plant-based milk

  • a sprinkle of coconut or crushed nuts ontop (optional)


Directions:

  1. Line your square dish with wax paper.

  2. Mix together all of the dry ingredients for the brownies.

  3. Add in all the wet ingredients and mix until everything is combined.

  4. Transfer to your dish and spread evenly.

  5. Press the mixture down using the back of a spoon.

  6. Place the dish in the freezer while you start the icing.

  7. Place all the ingredients for the icing in a mixing bowl and mix until smooth and creamy.

  8. Pour the mixture over the brownies and spread evenly.

  9. Slice into 8 slices and pop them in the freezer to set for up to an hour.

  10. Once they have set you can pop them in an airtight container and store in the freezer.
