Looking to mix up your hummus. This delicious Roasted Rugani Carrot hummus is made using Rugani Carrots and Rugani’s 100% Carrot Juice.
This recipe is so easy to make and with a few simple ingredients, you really can’t go wrong.
This hummus is creamy with just a slight touch of sweetness and goes down so well with some veggie sticks like carrots and cucumber or have it on some toasted bread or crackers.
A bonus with this hummus is it’s made with real nutritious ingredients. If you are not familiar with hummus it’s a delicious dip or spread that’s made with chickpeas, tahini, and spices. Try this take on it.
Time: 45 minutes
1 tin of chickpeas rinsed and drained
150g roasted Rugani carrots
1/4 cup of tahini
1/3 cup of olive oil
1/3 cup of Rugani 100% Carrot Juice
Salt and pepper to taste
1/2 tablespoon of ground coriander
Preheat your oven to 200°C.
Using a sharp knife, slice your carrots nice and thin.
Place the carrots on your baking tray and toss them with a little olive oil and salt and pepper.
Place in the oven to roast for 15-20 minutes.
Remove from oven and allow to cool for a couple of minutes.
Now on to the hummus.
Place all your ingredients for your hummus including the roasted carrots into your blender and blend until smooth.
Pour into your serving dish and chill in the fridge for 10-15 minutes before enjoying with some carrot and cucumber sticks, toasted bread, or crackers.
