Spooky Vegan Chocolate Cookies

Here’s a quick and fun chocolate cookie recipe with spooky eyes ✨
Ingredients:
2 cups cake flour
1/3 cup of cornflour
1/3 cup of cocoa powder
1 cup of castor sugar
Pinch of salt
Wet:
2/3 cup of coconut oil melted
1/3 cup of plant-based milk
1 teaspoon of vanilla essence

For the Eyes:
1 cup of icing sugar
3-4 tablespoons of melted coconut oil
Vegan chocolate chips

Directions:
Preheat your oven to 180 and spray your baking tray.
In your mixing bowl mix together all of your dry ingredients.
Add in the wet ingredients and combine until have the constancy of a cookie dough.
Scoop a tablespoon of the dough into your hand and roll it into a ball.
Place onto your baking tray.
Repeat with remaining dough.
Using a fork press down each cookie.
Place your tray into the oven and bake for 20 minutes.
Allow to cool. While your biscuits are cooling, let’s start making the spooky eyes.
In your mixing bowl add in your icing sugar and coconut oil.
Mix until you have a dough consistency. You may need to add more icing sugar if it is to wet or add in a little more coconut oil or too dry and crumbly.
Take about a teaspoon of the icing sugar mix and roll it into a ball using your hands.
Flatten slightly and add the chocolate chip to look like the pupil (black part) of the eye.
Repeat until you have the desired amount of eyes.
Once your cookies are cool, place your spooky eyes on them and decorate however you like.
