All you need is:
2 cups of all-purpose flour
1 teaspoon baking soda
1 teaspoon cream tartar
Pinch of salt
1 teaspoon vanilla
1/2 cup sugar of your choice
1/2 cup of oil such as coconut
1/2 cup of plant-based milk
1 cup of strawberry jam
1/3 cup sugar of choice
1/3 cup of plant-based milk
2 tablespoons cornflour
Preheat your oven to 180.
Start with your pastry by mixing together all the dry ingredients and adding in the wet ingredients. Combine until a dough forms.
Divide the pastry into two.
In your baking dish evenly spread out half of the pastry in the dish and place it in the oven to bake for 8-10 minutes while you quickly make the filling.
For the jam filling mix in your cup the cornflour and milk.
Place the rest of the ingredients into your pot on the stove at a high heat. Mix in the milk and cornflour mix until the filling thickens.
Pour this filling into your baking dish on top of the crust you have just cooked.
Roll out the rest of the pastry to fit the top of your dish and cover the filling.
Place in the oven to bake for a further 20-25 minutes until the pastry has cooked through.
Dust with some icing sugar and you are good to go 🌱
