These Vegan Christmas cookies are so quick and easy to make with no fancy ingredients.
You will need:
Measuring cups and spoons
Time: 45 minutes including cooking time.
Makes about 20-30 cookies depending on the cutter size.
1 cup flour plus more for rolling the dough
1 cup brown sugar
1 teaspoon baking powder
1/2 a teaspoon of ginger
1/2 a teaspoon mixed spice
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
Pinch of salt
1 teaspoon vanilla essence
1/2 cup of melted coconut oil
1/2 cup of water
Preheat the oven to 180 °C.
Mix together all of your dry ingredients.
Add in your wet ingredients.
Mix until a dough forms. You may need to add a touch more flour.
On a well-floured surface knead the dough slightly on the surface until it becomes shiny and strong enough to roll out.
Roll your dough out about 0.5 cm thick and cut out your desired cookies.
Place the cookies on a well-oiled baking tray. I filled three baking trays.
Place one try in the oven at a time and cook for about 15 minutes until the edges of the cookies start to turn a dark golden colour.
Remove from the oven and allow to cool. Repeat with the remaining trays.
