Tofu Scramble

Here’s what you need for this recipe
Ingredients:
2 blocks of firm tofu
2 tablespoons of olive oil
1 teaspoon of vegetable stock
+-2 tablespoons of nutritional yeast
1/2 an onion chopped
2 cloves of garlic sliced or crushed
1/4 red pepper chopped
1/2 an eggplant chopped
3 mushrooms chopped
2 pieces of broccoli chopped
A squeeze of lime or lemon
*You can add in some kala namak salt to give it an extra eggy flavor and if you want that slight yellow tinge then add in just a pinch of turmeric. Otherwise, I’m keeping it super simple today.
Directions:
Fry all this goodness up and enjoy it with some toast, in a wrap, or just on its own it's that good!
