Here’s what you need for this recipe

Ingredients:

  • 2 blocks of firm tofu

  • 2 tablespoons of olive oil

  • 1 teaspoon of vegetable stock

  • +-2 tablespoons of nutritional yeast

  • 1/2 an onion chopped

  • 2 cloves of garlic sliced or crushed

  • 1/4 red pepper chopped

  • 1/2 an eggplant chopped

  • 3 mushrooms chopped

  • 2 pieces of broccoli chopped

  • A squeeze of lime or lemon

*You can add in some kala namak salt to give it an extra eggy flavor and if you want that slight yellow tinge then add in just a pinch of turmeric. Otherwise, I’m keeping it super simple today.



Directions:

  1. Fry all this goodness up and enjoy it with some toast, in a wrap, or just on its own it's that good!
