This is my all time favorite birthday cake and it also makes the most amazing cupcakes and since today is my birthday I thought its the perfect time to share this quick and easy recipe.
1 1/2 cups of cake flour
1 cup of brown sugar
2 teaspoons of baking powder
pinch of salt
1/2 a cup of coconut oil
1 cup of plant-based milk
1 tablespoon of apple cider vinegar
1 teaspoon of vanilla essence
1/2 cup of vegan butter
2 1/2 cups of icing sugar
1 teaspoon of vanilla
Preheat your oven to 180.
In your mixing bowl, cream the coconut oil with the sugar using an electric mixer or whisk.
Add in the remaining wet ingredients.
Fold in the dry ingredients and mix until combined.
Pour into your baking dish and bake for 20 minutes.
While the cake is baking start with your icing.
Mix the icing sugar and butter together until smooth.
Add in the vanilla and gently mix in.
Place in the fridge while you cake continues to bake.
Once the cake has finished baking, remove from the oven and allow too cool before removing from the tin.
Once the cake is completely cool, remove from tin and ice how ever you like.
