I have always loved the simplicity of a bread and butter pudding but I’ve never come across a vegan version 🍃
Here’s what you need 🌿
6 slices of brown or white bread (bread that is a couple of days old works best)
1/2 cup of raisins
1/3 cup of brown or coconut sugar
1 teaspoon of ground cinnamon
1/8 cup of coconut or olive oil
1 teaspoon vanilla extract
1 and 1/4 cup of coconut milk
Preheat your oven to 180.
Slice your bread into squares.
Mix the bread and raisins together in a mixing bowl gently without breaking the bread.
Sprinkle the bread with the cinnamon.
In a separate mixing bowl mix all the remaining ingredients.
Pour the mixture over the bread and raisin mix and stir it through gently.
Transfer into your baking dish and bake in the oven for 45 minutes.
Garnish with a sprinkle of coconut flakes 🌿
Serve warm with some dairy-free cream or my favorite coconut custard (recipe in the South African Vegan Christmas Ebook,
