Happy #worldchocolateday! How exciting that this is even a day. I won't keep you long so here is the recipe for this delicious vegan Chocolate Brownie Pie. It's so quick and easy to make. Here's what you need.
1 1/2 cups cake flour
1/2 cup brown sugar
1/2 cup coconut oil or vegan butter
3-4 tablespoons ice-cold water
Pinch of salt
1 cup of cake flour
1/2 cup cocoa powder
1 cup brown sugar
1/3 cup oil of choice
1 teaspoon vanilla essence
2/3 cup of plant-based milk
Preheat your oven to 180°C.
In your food processor add in all of your dry ingredients for your crust and pulse until combined.
Add in the butter or oil and process. Slowly add in your water just 1 tablespoon at a time until you have a crumbly pastry and has formed a ball.
Spray your pie tin.
Place your pastry in the and evenly spread.
Place in the oven to bake for 15 minutes. Once finished baking remove from the oven while preparing your brownie batter.
In your food processor mix the sugar and oil for a good two minutes. Add in the plant-based milk and vanilla and mix.
Add in your remaining dry ingredients and mix.
Pour your brownie batter into your pie crust and place in the oven to bake for another 18-22 minutes.
Serve warm with some dairy-free cream or vegan ice cream and enjoy 🌿
