Vegan Christmas cake ๐ŸŒฟ๐ŸŽ„


This Christmas cake is so easy to make! Itโ€™s alcohol-free and completely vegan ๐Ÿƒ

Hereโ€™s what you need

Ingredients:

Dry:

  • 2 cups all-purpose flour

  • 1 cup of brown or coconut sugar

  • 2 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon cloves

  • 1/2 ground ginger

  • Pinch of salt

  • 2 cups of cake mix raisins



Wet:

  • 250g pitted dates

  • 1 cup of boiling water

  • 1 teaspoon vanilla essence

  • 1/2 cup of olive oil

  • 1/2 cup of plant-based milk



Glaze

  • 2 tablespoons plant-based milk or water

  • 1 tablespoon of coconut oil

  • 1 tablespoon apricot jam

  • 1 teaspoon vanilla



Directions:

  1. Preheat your oven to 180.

  2. Chop up your pitted dates and place them in a bowl.

  3. Pour your cup of boiled water over the dates and allow them to soak while you prepare the rest of your ingredients.

  4. In your mixing bowl add in all the dry ingredients and mix.

  5. Add the remaining ingredients including the dates and the water they were soaked in to the dry ingredients and combine.

  6. Oil your baking tin and pour your cake mixture in. Spread the mixture so it is even and place the cake in the oven to bake for 40 minutes.

  7. Once your cake has baked, prepare the glaze.

  8. Place all your ingredients into a little pot on the stove and bring to boil for just a couple of seconds. Pour over your cake and enjoy ๐ŸŽ„
