Vegan Coffee and Raisin Bake

🌿This is always a hit in our home!


  • 2 cups of all-purpose flour

  • 1 cup of brown sugar

  • 1 cup of raisins

  • 1 teaspoon baking soda

  • 1 teaspoon cream of tartar

  • Pinch of salt


  • 1/3 cup of hot water mixed with 1 tablespoon ground coffee

  • 1/3 cup of oil of your choice

  • 1 cup of plant-based milk

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon caramel essence


  1. Preheat your oven to 180 and oil your baking dish.

  2. In your mixing bowl add all of the dry ingredients and mix.

  3. Add in the wet ingredients and combine the mixtures.

  4. Pour the mixture into your baking dish and bake for 25-30 minutes

For the topping:

  1. Beat 2/3 of a cup of dairy-free creams such as Orley whip or coconut cream.

  2. Add in 2 tablespoons of maple syrup and 1 teaspoon of caramel essence.

  3. Once the bake has cooled pour the topping on top and sprinkle of a couple of raisins and coffee ontop 🍃
