Cranberry and Nut Bundt loaf

🌱This was so quick to make and your kitchen will smell so heavenly after 🍃



  • 2 cups of all-purpose flour

  • 2 teaspoon baking powder

  • Pinch of salt

  • 1/2 cup sweetener of choice

  • 1/2 cup of mixed raisins

  • 1/2 cup of mixed nuts or seeds

  • 1 teaspoon cinnamon

  • 1 teaspoon mixed spices


  • 1 1/4 cup of plant-based milk

  • 1 teaspoon apple cider vinegar

  • 1/4 cup of oil

  • 1 teaspoon vanilla


  • 2 tablespoons liquid sweetener

  • 2 tablespoons of oil of your choice


  1. Preheat your oven to 180.

  2. Mix together all your dry ingredients

  3. Measure out your milk and pour it into a small bowl. Add in the apple cider vinegar and give a quick stir and allow to rest for 2 minutes.

  4. Add all the wet ingredients including the milk mix to your dry ingredients and combine.

  5. Pour into your Bundt cake tin or any cake tin will do.

  6. Bake for 28-30 minutes.

  7. Mix together the ingredients for the glaze and brush on the baked loaf. Serve with some jam and vegan butter and enjoy 🍃
