This Easy Mushroom stroganoff is a great lunch or dinner recipe that's perfect for the whole family.
1 punnet of mushrooms
1 onion sliced
2 tablespoons olive oil
1 tin coconut milk
3 tablespoons lemon juice
Salt and pepper to taste
1 teaspoon mustard of choice
1 teaspoon of chili oil
1/2 teaspoon of smoked paprika
1/4 cup of grated vegan cheese
1/4 cup of spring onions sliced
Pasta of your choice
Place your pasta on the stove to cook following the package instructions.
Heat your oil in a pan and add in the onion and mushrooms and fry for 2 minutes.
Add in the reaming ingredients and cook for 5-8 minutes.
Once your pasta has finished cooking, drain and add to your pan with the creamy mushroom sauce. If the sauce is too thin for your liking just take a 1/4 cup of plant based milk and mix in 2 teaspoons of corn flour or tapioca flour and add to the pan. Cook for another minute or so until the sauce thickens.
Serve with some grated vegan cheese and spring onions and enjoy!
