Pizza With Home-Made Melted Plant-Based "Mozzarella"

This recipe really is such a favourite in our home! And this is just another way to include plant-based milk alternatives in your daily life.


You will need:

  • Oven tray

  • Pot

  • Measuring cups and spoons

  • 45 mins

  • serves 2-4(makes 2 large pizzas or 4 small pizzas)


Ingredients:

For the pizza dough


  • 2 cups of all purpose flour (plus 1/4 cup to flour the surface)

  • 1 sachet of yeast (optional)

  • A good amount of salt

  • 1 teaspoon of sugar (brown, coconut, xylitol)

  • 1 cup of warm water

  • 2-3 tablespoons of olive oil


Directions for the Pizza dough:


  1. Preheat oven to 180°C.

  2. Mix together all of your dry ingredients.

  3. Add in your water and mix until a dough forms.

  4. On a well floured surface, knead the dough for just a minute or two.

  5. Roll out your desired pizza bases in terms of size, thickness and shape.

  6. Place a base on an oiled tray into the oven and sprinkle a drizzle of olive oil on-top of the base. While that cooks slightly for about 8-10 minutes we will start with the vegan cheese.


Ingredients for the Plant-Based cheese sauce:


  • 1 tin of Food Lovers Market Coconut Milk

  • 1 teaspoon of garlic powder

  • 3 tablespoons of lemon juice

  • salt and pepper to taste

  • 3 teaspoons of corn flour


Directions for the cheese sauce:


  1. Place 2/3 of the tin of coconut milk in your pot on the stove at medium to high heat.

  2. Mix in the garlic powder, lemon juice, salt and pepper.

  3. While the mixture heats up, in a side bowl mix in the corn flour with the remaining coconut milk.

  4. Once the mixture has come to a boil turn the heat off and stir in the cornflour mixture. Keep mixing until the sauce becomes thick and creamy and starts to resemble melted cheese.


Pizza toppings:


  • Tomato paste (about 8 tablespoons)

  • Red onion marmalade

  • Sun-dried tomatoes

  • Spinach

  • Italian herbs


Assembling your pizza:


  1. Once your pizza base has turned slightly brown, remove from the oven and smear on 3-4 tablespoons of tomato paste.

  2. Then drizzle a generous amount of the cheese sauce over the tomato paste.

  3. Add on your favourite toppings. I used red onion marmalade, sun-dried tomatoes and fresh spinach.

  4. Once all of your toppings are on your base, place the pizza in the oven to cook for about 10-15 minutes. Remove from oven and sprinkle with Italian herbs and salt and pepper to taste.

  5. Repeat for the remaining bases.
