Vegan Speculaas Tarts

This Tart just tastes so festive! Kind of like a milk tart but just with a touch of different spices.
Makes 3 little tarts or 1 normal size
Ingredients:
For the crust:
1 cup of all-purpose flour
1/2 cup coconut oil softened
1 teaspoon vanilla
Pinch of salt
1/2 cup coconut sugar

Directions:
Preheat your oven to 180 and spray your tin/tins with nonstick.
In your mixing bowl add all the dry ingredients for the crust. Mix them roughly and pour in your softened coconut oil.
Mix until a dough forms. If you are making 3 small tarts then divide the dough into 3 even balls.
Spread the dough evenly through each tin using your hands.
Place into the oven to bake for 12-15 minutes.
Once they have finished baking remove from the oven and start with your filling
Ingredients for the filling:
1 1/2 cups of plant-based milk( I used soya)
1/2 cup coconut sugar
3 tablespoons cornflour
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon vanilla
Directions:
Place 1 cup of your milk into a pot and put it on the stove at medium to high heat.
Add in the sugar and spices.
In your remaining half a cup of milk mix in the 3 tablespoons of cornflour.
Once the mixture has started to boil, turn off the heat and mix in the cornflour until the mixture thickens. Once it had thickened then add in your teaspoon of vanilla.
Pour into your crust/crusts and place in the fridge to set for about 45 minutes 🌿
