Vegan Cheese Muffins


Hello and thanks so much for visiting Health Alignment today. I know I always start with this sentence but really I do appreciate you taking the time to visit my blog and try these recipes. And boy oh boy am I excited to share my latest and greatest recipe with you today. These vegan cheese muffins are savoury and soft with a hint of cayenne pepper to create full flavour in every single bite. I've always loved cheese muffins and so I took it upon myself to create an original vegan cheese muffin recipe that will leave people second guessing if this is actually vegan. These savoury muffins make for the perfect breakfast or teatime snack.

You will need:

Muffin tray

Oven

Mixing bowl

Measuring cups and spoons

Mixing spoon

Prep time: 5-10 minutes

Cooking time: 30 minutes

Ingredients:

  • 1 and 1/2 cups of all purpose flour (I used stoneground flour)

  • 1/2 Cup of nutritional yeast (found at most health stores)

  • 1 teaspoon of baking powder

  • 1/2 Teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 1/8 Teaspoon of cayenne pepper

  • 1/8 Teaspoon of smoked paprika

  • 1/2 an onion sliced into small chunks

  • 1 teaspoon of apple cider vinegar

  • 1/3 cup of oil of your choice

  • 1 Cup of water

Directions:

  1. Preheat the oven to 180 °C and oil your muffin tins.

  2. Sieve all of the dry ingredients into your mixing bowl.

  3. Add the onions and mix well.

  4. Combine the dry ingredients with the wet.

  5. Place a heaped tablespoon of the muffin mixture into each of the muffin dishes. Sprinkle some salt and pepper on top.

  6. Place the try into the oven and bake for 30 minutes.
