Malva Pudding

Malva Pudding is a famous South African dessert and I can't wait to share this vegan version with you. You really won't be able to guess that this is a vegan version!
Ingredients:
Dry :
2 cups of all-purpose flour
1 1/4 Cup Sugar
2 teaspoons of baking powder
1 1/2 teaspoon of baking soda
pinch of salt
Wet:
3 tablespoons of apricot jam
1/4 cup melted coconut oil
1 teaspoon of apple cider vinegar
1 & 1/2 cups of plant-based milk
For the sauce:
2 Tablespoons of coconut oil
2 tablespoons of sugar of your choice
1 tablespoon of apricot jam
1/4 tin of coconut cream
1 teaspoon of vanilla essence

Directions:
Preheat your oven top 180 °C and start with the Malva.
Mix together all of your wet ingredients. Add in the dry ingredients and mix until smooth.
Pour into your oiled baking dish and place in the oven to bake for about 35-40 minutes or test if the pudding is ready by inserting a thin knife into the center and if it comes out clean your pudding is ready.
Once your Malva is ready, start with the sauce.
Melt the coconut oil in a pot mixing in the sugar and jam. Add the coconut cream and bring to boil.
Remove from heat and stir in the vanilla essence.
Using a toothpick, pierce the top of your malva pudding with a couple of holes. Pour the sauce evenly on top and serve the pudding warm.
