Hazelnut Cuppccino Muffins



These are my favourite muffins to serve with a warm cup of coffee or a tall glass of almond milk!

You will need:

Oven

Muffin tray

mixing bowl

Measuring cups and spoons

Time:30 minutes

Makes 9-12 muffins.

Ingredients:

  • 1 1/4 cup of stoneground cake flour or all purpose flour

  • 2/3 cup of sugar of your choice

  • 1 1/2 teaspoons of baking powder

  • 1 teaspoon of baking soda

  • 1 cup of strong brewed coffee and room temperature

  • 1 teaspoon of vanilla essence

  • pinch of salt

  • optional 2 tablespoons of coconut oil

  • 70 Grams of semi-crushed hazelnuts( if you have a nut allergy just leave these out)

Directions:

  1. Preheat oven to 180°C.

  2. Mix all the dry ingredients including the nuts.

  3. Add in the wet ingredients.

  4. Pour evenly into a well-oiled muffin tray.

  5. Place in the oven to bake at 180 °C for about 20-25 minutes.
