These are my favourite muffins to serve with a warm cup of coffee or a tall glass of almond milk!
You will need:
Measuring cups and spoons
Makes 9-12 muffins.
1 1/4 cup of stoneground cake flour or all purpose flour
2/3 cup of sugar of your choice
1 1/2 teaspoons of baking powder
1 teaspoon of baking soda
1 cup of strong brewed coffee and room temperature
1 teaspoon of vanilla essence
pinch of salt
optional 2 tablespoons of coconut oil
70 Grams of semi-crushed hazelnuts( if you have a nut allergy just leave these out)
Preheat oven to 180°C.
Mix all the dry ingredients including the nuts.
Add in the wet ingredients.
Pour evenly into a well-oiled muffin tray.
Place in the oven to bake at 180 °C for about 20-25 minutes.
