Olive and Rosemary Bread


Is there anything better than the smell of fresh homemade bread? This is my all-time favourite homemade bread that goes down so perfectly with almost any meal.

You will need:

Measuring cups and spoons

Mixing bowl

Baking tray

Oven

Time:2 hours

Ingredients:

  • 2 cup of stone ground white bread flour or all-purpose flour

  • 1 sachet of yeast

  • 1/2 teaspoon of sugar

  • 1 teaspoon of baking powder

  • 1 teaspoon of Italian herbs

  • 1/4 teaspoon of sea salt

  • 100 grams of pitted olives of choice

  • 2 tablespoons of fresh rosemary

  • 1 cup of lukewarm water

  • 1 Tablespoon of oil of your choice

Directions:

  1. Mix together all the dry ingredients excluding the olives.

  2. Add in the water and mix until a dough forms.

  3. Knead the dough for about 2 minutes.

  4. Place in a bowl covered with a cloth. Leave in a warm area to rise for about 1 hour.

  5. Once your dough has risen. Oil your hands and mix the olives and fresh rosemary into the dough by folding them in.

  6. Place a few olives on top of the dough with some fresh rosemary and sea salt.

  7. Place the dough in the shape you desire onto a floured baking tray.

  8. Cover and allow to rise another 20 minutes.

  9. In this time you can preheat the oven to 200°C.

  10. Once your dough has risen place in the oven to cook for about 25-35 minutes or until golden brown on top and sounds hollow when you tap the top of the bread.

  11. Serve with your favourite stews, soups, hummus, vegan butter or whatever you fancy.
