Coconut Vanilla Fridge Cake

Easy delicious fridge cake in a few minutes!

Nuts
Soy
Gluten-free option
Refined sugar
You will need:
Baking dish(round or square)
Pot or microwave safe dish
Measuring cups and spoons
Prep time: 8-10 minutes
Set time: 2 hours
Ingredients
Base:
1 cup ground oats(GF if need be)
1 cup coconut
1 teaspoon vanilla
2 tablespoons maple syrup
2 tablespoons coconut oil
pinch of salt
Filling:
1 tin of coconut milk or cream
4 tablespoons of maple syrup
1 1/2 teaspoons of vanilla
pinch of salt
3 tablespoons corn flour
1/4 cup plant based milk
Directions:
1.Blend all the ingredients for the base together until fine consistency. Pour the base mixture into your dish and press don evenly.
2.Heat the filling ingredients except for the corn flour and milk in a pot or in the microwave for 2-3 minutes until boiling.
3.Mix the corn flour and plant based milk and mix into the mixture until thick and creamy.
4.Pour onto the base mix and even out.Top with your favourite fruits or chocolate.(I used dried figs and grated dark chocolate)
5.Place in the freezer for 2 hours to set and then move to fridge until ready to serve.
