Vegan Macadamia Nut Muffins!

These are so delicious and easy to make. Perfect for a quick breakfast or tea time snack.🌱🌱🌱

You will need:
Mixing bowl
Measuring cups and spoons
Muffin tray
Total time:30 minutes
Makes 12 medium sized muffins
Ingredients:
1 and 1/2 cups of regular flour
1/2 cup of coconut sugar or brown sugar
A teaspoon of baking soda
Pinch of salt(if using raw nuts)
2/3 Cup of Macadamia nuts( I used the Food Lovers Market salted and roasted macadamia nuts. You can use crushed or whole nuts and roasted or raw)
1/2 a cup of maple syrup or sub honey
1/2 a cup of coconut oil melted
1 teaspoon vanilla essence
1 and 1/2 a cup of water
A teaspoon apple cider vinegar
Directions:
Preheat oven to 180°C.
Mix together all your dry ingredients including the nuts.
Add in your wet ingredients and mix until smooth.
Pour into your well-oiled muffin dish and bake for 20-25 minutes until slightly golden.
Optional Glaze:
1/4 cup of icing sugar
2 Tablespoons of water or plant-based milk
Mix together until smooth.
