Vegan Macadamia Nut Muffins!

These are so delicious and easy to make. Perfect for a quick breakfast or tea time snack.๐ŸŒฑ๐ŸŒฑ๐ŸŒฑ

You will need:

  • Mixing bowl

  • Measuring cups and spoons

  • Muffin tray

  • Total time:30 minutes

  • Makes 12 medium sized muffins


  • 1 and 1/2 cups of regular flour

  • 1/2 cup of coconut sugar or brown sugar

  • A teaspoon of baking soda

  • Pinch of salt(if using raw nuts)

  • 2/3 Cup of Macadamia nuts( I used the Food Lovers Market salted and roasted macadamia nuts. You can use crushed or whole nuts and roasted or raw)

  • 1/2 a cup of maple syrup or sub honey

  • 1/2 a cup of coconut oil melted

  • 1 teaspoon vanilla essence

  • 1 and 1/2 a cup of water

  • A teaspoon apple cider vinegar


  1. Preheat oven to 180ยฐC.

  2. Mix together all your dry ingredients including the nuts.

  3. Add in your wet ingredients and mix until smooth.

  4. Pour into your well-oiled muffin dish and bake for 20-25 minutes until slightly golden.

Optional Glaze:

1/4 cup of icing sugar

2 Tablespoons of water or plant-based milk

Mix together until smooth.
