The easiest Oat Cinnamon rolls ready in under 5 minutes!
You will need:
Measuring cups and spoons
Makes 3-4 cinnamon rolls
Ingredients for the dough
1 3/4 cup oats ground down
1 teaspoon yeast
Pinch of salt
2 tablespoons coconut sugar
1/2 teaspoon of cinnamon
2 Tablespoons of corn flour to flour the surface for rolling the dough out
1/4 cup of milk
1/2cup boiling water
A teaspoon vanilla essence
For coating the rolls
1/4 cup of coconut oil
Cinnamon and sugar mix
1/2 cup of plant-based milk( I used unsweetened soya milk)
For the icing:
3 tablespoons of icing sugar
2 tablespoons of plant-based milk
Ground down the oats until fine as flour.
Mix together all the dry ingredients.
Add in the wet ingredients and mix until a dough forms.
Flour the surface using the corn flour.
Divide the dough into 2-4 portions. Roll out each portion into a rectangle.
Baste the roll with coconut oil and a generous sprinkle of cinnamon and sugar mix.
Roll the cinnamon rollup.
Oil the bottom of your mug with a dash of coconut oil and place the roll inside.
Pour over 1-2 tablespoons of plant-based milk.
Place the mug in the microwave for 2-3 minutes.
While the cinnamon roll is in the microwave mix together your icing mix and pour it onto the cinnamon roll when serving.
