Carrot Flapjacks

These easy to make Carrot flapjacks make for excellent breakfasts or lunch box fillers. They are also so simple and fun to make with Kids. They also get a powerful punch of nutrients from the Rugani Tumeric Infused Carrot Juice.

All you need is:

  • Non-stick frying pan

  • Mixing bowl

  • Measuring cups and spoons

  • Grater

  • Time: 20 minute

  • Makes about 8-9 flapjacks


  • 2 cups of all-purpose flour

  • 1 teaspoon of baking powder

  • Pinch of salt

  • 1 teaspoon of ground cinnamon

  • 1/8 teaspoon of ground nutmeg

  • 2-3 tablespoon of sweeteners such as sugar or syrup

  • 1 cup plus 1/3 cup of Rugani turmeric-infused carrot juice

  • 1 tablespoon of coconut oil plus a bit more for frying

  • 2/3 cup of finely grated carrots


  • Fresh fruit such as bananas and berries

  • Toasted coconut flakes

  • Nut butter

  • Coconut cream

  • Granola

  • Cinnamon and sugar mix


  1. Mix together all of your dry ingredients including the grated carrot.

  2. Add in all your wet ingredients and mix until well combined. Place your pan on the stove at medium heat with a dash of coconut oil.

  3. Once the pan is hot, scoop 1/4 cup of the mixture into the pan.

  4. Allow it to cook for a good 2 minutes watching for bubbles to form and start to pop. Flip and cook for a further 1 minute. Repeat until batter is finished.

  5. Now for the fun part, stack them up with some bananas in between each layer and just cover them with all your favourite toppings or you can enjoy plain with some cinnamon and sugar 🌱
