Chickpea Cookie Dough


Chickpea cookie dough 🌿Finally had the guts to play around with this recipe and I really am very surprised at how much it actually does taste like cookie dough! 🌿The key I have found with this though is to serve it chilled! It tastes so much better coming out of the fridge 🌿



Here’s the recipe:


  • 1 tin chickpeas drained and well rinsed

  • 2 heaped tablespoons of tahini or nut butter

  • 1 teaspoon vanilla extract

  • 3-4 tablespoons liquid sweetener

  • 1 tablespoon melted coconut oil

  • 1/4 cup of oats

  • 1/2 teaspoon ground coffee(optional)

  • 80g dark chocolate crushed



Directions:

  1. Place all the ingredients except for the dark chocolate into your blender and blend until smooth.

  2. Stir in the dark chocolate pieces and place the batter in the freezer for about 30 minutes to chill 🍃
