Peanut raisin muffins


This was such a good combo🌱 I love muffins that have a crunch texture in them and that’s one of the top qualities in these gems.


You will need:

  • Mixing bowl

  • measuring cups and spoons

  • time 35 minutes

  • makes 12-16 muffins

  • muffin tray or loaf tin



Ingredients

  • 2 cups of all-purpose flour

  • 2/3 cup of sugar of choice

  • 2 teaspoon of baking powder

  • 1 teaspoon cinnamon

  • 1/4 teaspoon cloves

  • 1/4teaspoon ginger

  • 1/2 teaspoon mixed spice

  • 150 g of raisins and peanuts mix

  • 1 cup of grated carrots



Wet

  • 1/2 cup of coconut oil melted

  • 1 cup of plant-based milk

  • 1 teaspoon of vanilla

  • 1 tablespoon of apple cider vinegar


Directions:

  1. Preheat oven to 180°C.

  2. In your mixing bowl, add in all the dry ingredients and mix.

  3. Measure out your cup of milk and mix it in the tablespoon of apple cider vinegar. Allow sitting for about a minute.

  4. Add the wet ingredients including the milk to the dry mix and combine until everything is mixed in.

  5. Scoop the mixture evenly into your muffin tin or loaf tin and bake for 25- 30 minutes 🌱
