This has always been one of my favorite desserts and guesses what. I haven’t had it in almost 8 years since going vegan so I had so much fun playing around with this today 🍃
For the crust:
1 1/2 cups of flour
1/2 cup sugar
Pinch of salt
1/2 cup coconut oil
1/4 cup of water
For the Pecan filling:
120 g pecans whole or crushed
1/5 cup of milk
1/2 cup of maple syrup
Preheat your oven to 180°C. Start with the crust.
Add all the dry ingredients to your mixing bowl and mix.
Add in the wet ingredients and combine the mixtures until a dough forms.
If you are making 3 small-medium pan pecan pies then your will need to measure out 1/2 a cup of the dough for each pan. Save about 1/4 to 1/2 a cup of the pie crust and put aside for the filling.
Press the dough down evenly through the pie dishes/s
Place in the oven to bake for 10 minutes while you do the filling.
Add all the ingredients for the filling into your mixing bowl and add in the remaining 1-4-1/2 a cup of pie crust and mix.
Once the crusts have baked in the oven for 10-12 minutes remove and place the filling inside the pies.
Place in the oven to make for about 10-15 minutes.
Serve as is or with some coconut condensed milk or cream
