Pecan Pie

This has always been one of my favorite desserts and guesses what. I haven’t had it in almost 8 years since going vegan so I had so much fun playing around with this today 🍃

For the crust:

  • 1 1/2 cups of flour

  • 1/2 cup sugar

  • Pinch of salt

  • 1/2 cup coconut oil

  • 1/4 cup of water



For the Pecan filling:

  • 120 g pecans whole or crushed

  • 1/5 cup of milk

  • 1/2 cup of maple syrup



Directions:

  1. Preheat your oven to 180°C. Start with the crust.

  2. Add all the dry ingredients to your mixing bowl and mix.

  3. Add in the wet ingredients and combine the mixtures until a dough forms.

  4. If you are making 3 small-medium pan pecan pies then your will need to measure out 1/2 a cup of the dough for each pan. Save about 1/4 to 1/2 a cup of the pie crust and put aside for the filling.

  5. Press the dough down evenly through the pie dishes/s

  6. Place in the oven to bake for 10 minutes while you do the filling.

  7. Add all the ingredients for the filling into your mixing bowl and add in the remaining 1-4-1/2 a cup of pie crust and mix.

  8. Once the crusts have baked in the oven for 10-12 minutes remove and place the filling inside the pies.

  9. Place in the oven to make for about 10-15 minutes.

  10. Serve as is or with some coconut condensed milk or cream
