Vegan Butter Bean Nourish Bowl


This easy butter bean nourish bowl is so quick and easy to make! It has a good amount of protein and is so tasty.

Ingredients:

For the butter beans

  • 1/2 cup of butter beans

  • 1/2 teaspoon of cumin ground

  • 1/2 teaspoon of coriander ground

  • Salt and pepper to taste

  • Squeeze of a lemon

  • 1 tablespoon of coconut yogurt

  • 1/4 teaspoon of chili paste

For the bowl

  • 1/2 cup of cooked cous cous (1/4 cup uncooked)

  • 1/2 cup of thinly slices cabbage (purple or white)

  • 1/2 cup of grated carrots

  • 1 pitted date sliced

  • Spring onions

  • 1 tablespoon of B well-reduced oil mayonnaise

  • 1 tablespoon of coconut yogurt


Directions:

  1. Start with cooking your beans by adding the to a pan with the spices.

  2. Sauté for 2 minutes.

  3. Add in the lemon, coconut yogurt, and chili paste and stir through.

  4. Now assemble your bowl by adding in the cooked cous cous, cabbage, carrots, and beans, and top with the spring onion and chopped date. Add on the mayo and yogurt and enjoy with some fresh lemon. This bowl is just over 400 calories and has over 23g of protein
