This is a great wholesome warm meal thats perfect for having friends and family over for. It's a cost effective lunch or dinner and is something that you can jut quickly throw together and allow to slowly cook while you do other bits. South Africa is know for its Potjie's and this mushroom and veg potjie is a great way to stir the pot.
Time: 2 Hours
1 Tablespoon coconut oil or water
3-4 Medium onions chopped
2 Teaspoons crushed garlic
6 Medium potatoes roughly chopped
3-4 Medium carrots roughly chopped
1 Yellow Pepper roughly chopped
1/2 Bunch of celery roughly chopped
1 Punnet of mushrooms roughly chopped
1/2 Punnet of green beans
1/2 Handful of fresh coriander
1/4 Handful of fresh parsley
3 1/2 Cups of water
2 Tins of chopped tomatoes
Heat the coconut oil or water in a pot.
Fry the chopped onion for about 2 minutes on medium heat.
Add the garlic and yellow pepper and cook for a further 3-5 minutes .
Add the chopped potatoes and carrots.
Add 2 Cups of water and simmer for about 15 minutes.
Add the 2 tins of tomatoes and 1 and 1/2 cups of water.
Add the green beans,celery, leaks and mushrooms.
Add salt and pepper to taste.
Reduce heat and allow to slowly cook for about an hour until all the vegetables are cooked through.
Top with some more fresh coriander and parsley and serve with your favourite rice or rolls and enjoy!
