Vegan Nachos


Hello guys and thanks so much for coming to our site today! I'm so excited to share this recipe with you. These Nachos are simple to make, so delicious and you would never guess they are vegan! This dish is so full of flavour from the smokey refried beans to the creamy cheese and chunky guacamole topped with the perfect bit of homemade sour cream. It's really mouth watering stuff.

These nachos are hearty, crunchy, fresh, savoury, filling and oh so satisfying. They make for the perfect starter or even great for a snack in front of the TV. These really are like the kind of nachos you expect to come from a restaurant except you can make them quick and easy at the comfort of your own home for a fraction of the price!

Ingredients:

  • 1 Pack of organic corn chips such as santa annas

Refried red beans:

  • 1 Onion thinly sliced

  • 1 Tin Red kidney beans well drained

  • 2 Teaspoons smoked paprika

  • 1 Teaspoon coconut oil

Cheese:

  • 2 Carrots boiled(with or without skin)

  • 1 Potatoe boiled(with or without skin)

  • Salt and pepper

  • 1 Teaspoon Apple Cider Vinegar

  • 1/2 Teaspoon garlic

  • 1 teaspoon of mustard powder

  • 1/2 Teaspoon smoked paprika

  • 175ml cold water

  • 2 Tablespoons Nutritional Yeast (optional)

Salsa:

  • 1 Tomato chopped

  • 1 Teaspoon sweeter of your choice

  • 1 Teaspoon smoked paprika

  • Salt and pepper

Guacamole:

  • 1 Avocado smashed

  • Salt and pepper

  • Optional lemon juice

Sour cream:

  • 2 Tablespoons chilled coconut cream

  • Salt and pepper

  • 1 Teaspoon of lemon juice

  • 1 Teaspoon fresh coriander chopped

Garnish with more fresh coriander.

Directions:

  1. Preheat oven to 180°C.

  2. Sauté onion in coconut oil or water and cook for about 2 minutes until soft.

  3. Add the garlic and fry for about 30 seconds and then add the smoked paprika and red beans.

  4. Blend all the cheese ingredients in a high speed blender until smooth.

  5. Lay the nacho chips in a baking tray and pour the cheese evenly over the chips.

  6. Bake in the oven for 20 minutes.

  7. Top the chips with the refried red beans, salsa, guacamole and sour cream and enjoy.
