Chickpea and potato curry

The easiest Chickpea and Potato curry 🌿We make this all the time and it’s the best 🌱

All you need is:


  • 1 onion diced

  • 2 potatoes diced

  • 1 tin of chickpeas rinsed

  • A handful of raisins (optional)

  • A handful of fresh spinach

  • 2 tablespoons coconut cream

  • Salt and pepper

  • 1 teaspoon curry powder

  • 1 teaspoon sweetener

  • Boiling water


  1. Place your pot on the stove at high heat. Add in some boiling water to cover the bottom and sauté the onion.

  2. Add in the curry powder and cook for about a minute.

  3. Add the diced potatoes and add enough boiling water to cover the potatoes.

  4. Simmer until the potatoes are soft.

  5. Now add the chickpeas and raisins.

  6. Cook for about 3-5 minutes and add in your salt, pepper, and sweetener.

  7. Add in your handful of baby spinach and stir through.

  8. Serve with some rice or toasted wraps and top with some banana, coconut, and whatever else you like 🌱
