Chickpea "Omelette"

Chickpea “omelettes” are actually so easy to make once you get the hang of things 🍃
Mine pretty much went like this:
For the “omelette”
1/2 a cup of chickpea flour
1 teaspoon baking powder
Dash of coriander, cumin, kala namak salt and pepper.
1 cup of water
Filling:
Onions sliced
Sliced tomatoes sliced
Baby spinach
Fresh oregano
A dash of balsamic reduction.
Directions:
Pop your stove on medium to high heat using a non-stick pan with some spray and cook or olive oil.
Mix together the mixture for the omelette and pour into the pan.
Cook slowly for a good 5-8 minutes.
Place all your fillings on the one side of the omelette and allow to cook for 3 minutes.
Fold the one side over and cook for a further minute or two and serve with fresh herbs and balsamic glaze 🌱
