Creamy Lemon and Garlic Tagliatelle


This pasta is just so dreamy and delicious! It's super quick to make and so satisfying!

Serves: 2



Creamy Garlic Pasta sauce:

  • 100 g cashews

  • 150 ml boiled water

  • 1/2 cup plant-based milk

  • 3 tablespoons lemon juice

  • 1-2 cloves garlic

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • 2 tablespoons nutritional yeast (optional)

Dry:

  • 200g tagliatelle pasta


Directions:

  1. Soak your cashews in the boiled water for about 15 minutes.

  2. Place your pot on the stove filled with water and bring to boil. Add a touch of salt to the water.

  3. Once the water is boiling, add your pasta following the cooking instructions on the packet.

  4. While your pasta boils, make your creamy garlic sauce.

  5. Add to your blender the cashews and the water they have been soaking in. Add in all the remaining sauce ingredients and blend until creamy. Adjust flavor with salt and pepper.

  6. Once your pasta has cooked, drain and place back into your pot.

  7. Pour your creamy sauce over and heat through with the pasta.

  8. Serve immediately with salt and pepper and an optional sprinkle of nutritional yeast.
