Pad Thai

You will need:

  • Pan

  • Measuring cups and spoons

  • Sharp Knife

  • Pot for boiling

  • Serves4-6



Ingredients:

  • 1 tablespoon of coconut oil or you can sub water.

  • 1 Onion finely sliced

  • 2-3 cloves of fresh garlic crushed

  • a handful of fresh coriander

  • 2 cups of shredded cabbage

  • 1 cup of mixed stir fry veg such as carrots, green beans, peas

  • 2-3 Chilles

  • 2 Tablespoons of peanut butter (smooth or crunchy)

  • 4-6 tablespoons of soya sauce

  • 60g of Cashew nuts(can be raw or roasted and salted)

  • salt and pepper

  • 1 tablespoon of fresh lemon juice

  • Spaghetti or noodles of choice


Directions:

  1. Place your pan on the stove at high heat. Pop the oil or water in the pan and once heated add in the chopped onions.

  2. Saute until slightly softened. Add in the chopped chili and garlic and cook for 2 minutes. You may need to add in a dash of water.

  3. Place your pasta on the stove to cook following the instructions ion the packaging.

  4. Add in the cabbage and stir fry veg and fry until soft.

  5. Once your veg has softened add in the soya sauce and mixes through. You can reduce your heat now.

  6. Add in the freshly chopped coriander and peanut butter. Mix until everything is well combined. Taste and add in your salt and pepper as well as the fresh lemon juice.

  7. Once your pasta has cooked, add it to the stir fry pan and spread the stir fry through the spaghetti.

  8. If you are using raw cashews you can easily just dry roast them in a pan on medium heat for 2-3 minutes.

  9. Serve with a sprinkle of cashews and some more fresh coriander and chile.

  10. Enjoy!
