Sweet Potato Gnocchi

I love making this for a quick lunch and having it prepped in the fridge is always great to add to any dish.

You will need:
Measuring cups
Mixing bowl
Fork for mashing the potatoes
Pot for Boiling
Time 45 minutes
Ingredients for the gnocchi:
2 cups sweet potato mashed
1 2/3 cups cornflour
pinch of salt
Optional toppings:
Fresh garlic
Onion
Baby spinach/ Coriander/ Rocket
Chile

Directions:
Peel your sweet potato and boil until soft.
Once it has cooked allow to cool slightly. This is a good time to chop up all your favorite toppings.
Mash your potato until smooth.
Add in the cornflour 1 cup at a time and combine until you have a good dough to work with.
Roll your gnocchi out into whatever shapes you like. I normally just make a long thin roll and then slice them into little squares or balls and flatten them out.
Bring a pot of water with salt in to boil. Place the gnocchi in and cook until it floats to the top. While your gnocchi is boiling you can start to fry up all your toppings.
I love to fry mine in some coconut oil. My favorite combinations are onions, garlic, baby spinach, chile, and a good sprinkle of nutritional yeast.
Once your gnocchi has risen to the top of the boiling water and has started to float, strain the water. Add the gnocchi to the pan with all your toppings and fry for a further 3-5 minutes. Enjoy!
